Fullblood Wagyu,
raised by hand & shipped from our ranch.

100% fullblood Japanese Black beef from the same documented genetics behind our breeding program — quarter, half, and full, plus 90% lean ground beef. Hand-cut, flash-frozen, and shipped to your door or picked up locally. No feedlot. No middleman. What “Fullblood” really means →

100% Fullblood

Genuine Japanese Black — not a Wagyu-Angus cross. The real thing, with the pedigree to prove it.

Raised by us

Born, raised, and finished on our ranch in the Colorado high country. We know every animal by name.

Documented genetics

Every steer traces to the elite bloodlines in our breeding catalog. Transparency from pasture to plate.

Small-batch

Hand-cut and flash-frozen in limited runs. When a steer sells out, it's gone until the next.

How do you want it cut?

Not sure what to tell the processor?

When you reserve a quarter, half, or full, you decide how it's cut and wrapped. New to buying beef this way? Start with one of these — then we'll fine-tune it with you.

Option 01

More Steaks

For the grill-first household.

  • Ribeye, New York strip, T-bone & filet — cut 1–1½″ thick
  • Sirloin & flat-iron steaks
  • A roast or two; the rest to 90% lean ground
Option 02

More Ground Beef

For burgers & weeknight cooking.

  • Most of the animal to 90% lean ground, in 1 lb packs
  • Keep the premium steaks — ribeye, strip & filet
  • Minimal roasts — maximum value per pound
Option 03

More Roasts & Braises

For slow cooking & big family meals.

  • Chuck, rump & sirloin-tip roasts
  • Brisket & short ribs kept whole
  • Balanced steaks and ground for the rest

Give your processor one of these as a starting point — and we'll happily help you build your own cut sheet. Questions? Reach out →

The Carlog Difference

The same genetics we breed, on your table.

Most Wagyu sold in America is a cross — Wagyu bred to Angus. Ours isn't. Every animal we raise is 100% fullblood Japanese Black, out of the elite, fully documented bloodlines in our breeding program.

We finish slow in the clean air and water of the Colorado high country, then process at our own USDA-inspected facility so we control quality from the first day to the last cut. You're not buying beef from a label — you're buying it from the rancher who raised it.
